8-Bit refers to the sprite style from the NES system. It consists of limited shading and detail compared to more modern sprites due to the restrictions on the NES system.

The Main Site uses 8-Bit to show events occurring in the past (usually in Game Parodies). This provides not only an easy way to show when (relative to the present) events are occurring, but also allows Dave to use the sprites from the Mega Man games, rather than try to make his own 16-Bit conversions.
